Hainanese Chicken Chop

Kluang Station cafe serves a pretty good rendition of Hainanese Chicken Chop. My last visit to homeland was not a fruitful gastronomical adventure due to a untimely sore throat. I did not get to taste my all time favourite Hainanese Chicken Chop. The way to settle this 'unfinished affair' with Hainanese Chicken Chop is to dish up my own simple and tasty version.

My homemade version of  Hainanese Chicken Chop scored big. It turned out perfectly, both visually and in taste too. I am ecstatic to share the recipe.

Ingredients
Chicken fillet, breadcrumbs, an egg (beaten), carrot (cut into small cubes), onion (sliced), button mushroom(sliced), tomato sauce, soy sauce, ABC sweet soy sauce, corn starch, water, sugar, salt and pepper, cooking oil.

Instructions
1. Marinate chicken fillet with some soy sauce, sugar, corn starch, salt and pepper. Set aside to marinate for 1 hour.
2. For sauce mixture, mix the following in a bowl -  tomato sauce, soy sauce, ABC sauce, water, sugar, salt and pepper.
3. Coat the marinated chicken fillet with egg mixture follow by the breadcrumbs.
4. Heat sufficient oil in a pan, deep-fry the chicken fillet until it turns golden brown.
5. In a fresh pan, heat some oil and sauteed the onions. Add in the carrot cubes, button mushroom and sauce mixture prepared earlier. Thicken the sauce with corn starch solution.
6. Pour the cooked sauce onto the fried chicken fillet.

Serve the chicken chop with fries or rice. There you go the homemade version of Hainanese Chicken Chop.

Delicious and Simple Fried Egg-Noodles Recipe

Fried noodles is my best option when ever I run out of ideas on what to prepare for dinner. The ingredients for my fried noodles varies depending on what is sitting in my fridge. Eggs and carrot are core ingredients that will never run short at home as I am a vegan "Rabbit" who eat EGGs (just kidding). I am not a huge fan of hams and sausages, but I do sometimes stock up some in my fridge just in case I have sudden cravings for "big breakfast".

The recipe for today is a simple fried egg-noodles with carrot, cabbage, mushroom, eggs and hotdog.

Instructions
1. Sliced the carrot and then cut into fine strips. Cut cabbage into fine strips. Sliced mushrooms and hotdog.
2. Bring a pot of water to boil and cook the egg noodle until Al-dente. Drain the cooked noodles and set aside.

3. In a heated non-stick pan, pour in the egg mixture (2 beaten eggs). Start stirring the egg mixture with a pair of chopsticks to make it scramble. Plate out and set aside.
4. In the same pan, heat up some cooking oil and add in the carrot, cabbage, sausage, mushroom and stir well.
5. Add in the cooked noodles, scramble egg and some seasoning (1 tbsp of say sauce, a pinch of salt, sugar and pepper) and water. Stir fry the noodles for 5 minutes until all the flavors combined.


Voila, there you have it a very simple yet delicious fried egg noodle recipe. Guarantee to be yummy.

Free To Visit Berlin World War 2 Historical Sites

Berlin is perhaps the best city on earth to walk you through the history of WWII. It was once the administrative center to the Nazi and also where the war ended.

There are quite a number of historical sites which are opened to the public for free. Yes you read it right, admission FREE. You may also expect exhibitions at some of the sites. You will never get disappointed visiting Berlin city as it offers a true history excursion of WWII, the most cruel war in human history.

Here are some of the sites you could visit for free.

1) Topography of Terror and Berlin Wall
Berlin Wall was constructed by the German Democratic Republic (GDR) to separate Berlin’s Eastern and Western sectors. Berlin Wall stood at 3.6 meters height and 150km long. This is one of the surviving fragment of the Berlin Wall, border between the districts of Mitte (East Berlin) and Kruezberg (West Berlin). The remaining wall is merely 200 meters long with clear traces of destruction occured between year 1961 til 1989.

2) Berlin Wall Memorial Grounds
This is a Must-Visit historical spot to learn about the history and consequences of the Berlin Wall on three different levels: artistically, factually, and spiritually. The memorial grounds consists of the preserved border fortifications, form the core of the memorial on Bernauer Strasse, Chapel of Reconciliation and Window of Remembrance. On this preserved ground also stands the 1.4km long monument, the last piece of Berlin wall.

3) Nordbahnhof S-Bahn station (border station)
Next to the memorial ground is the infamous Nordbahnhof S-Bahn underground station, also known as the "ghost station" in West Berlin between 1962-1989. This was a deserted station in East Berlin as trains (S-Bahn line) came from the West were not stopped at this underground.  Worth a visit to get a glimpse of this East Berlin's underground station which was once its passenger platforms guarded by many transport police and border soldiers to stop any planned deserters.

4) Berlin Friedrichstraße station
This station was once the terminal and a border crossing point for travelers from both the West and East of Berlin in August 1961. Today, the facade of the station has preserved (as much as) its original looks to serve as an important historical reminder of the formal border crossing. You can experience getting your "passport" stamped here by passing through the East Berlin immigration border.

5) Checkpoint Charlie (Checkpoint C)
This famous crossing point between West and East Berlin, was once maintained by the US Army. With great influence from Western Allies, you may spot American flag flying in the sky to signify the American sector. Today it is one of the favourite photography spot for many tourists. Along the street, there are open-air exhibition, museum and bookstores to re-trace the history of Checkpoint Charlie, Berlin Wall and even WWII.

6) Memorial to the Murdered Jews of Europe (Holocaust Memorial)
Built in 2003 with the construction cost of €25 million, the memorial is built to commemorate Jewish victims of the Holocaust in Berlin. The grey concrete slabs arranged neatly on a sloping field and made the  Holocaust Memorial a peaceful spot to commemorate the victims to the WWII. Remember to visit the underground exhibition area.

7) Remnants of Hitler's bunker (Führerbunker)
The bunker has been destroyed by the Russians right after the end of the war. The site has now being transformed into a residential area. In case you are curious about the location of Hitler's bunker, it's actually under the garden of the Reichskanzlei (1), which was at 77 Wilhelmstraße. The location is marked with a plaque explaining the layout and construction of the bunker.

3 Simple Steps: 3 Ingredients Brownies Recipe

3 ingredients Nutella brownies

Incredible Nutella Brownies, just with 3 basic ingredients in 3 simple steps!!

I never thought of baking a tray of delicious brownies can be this simple until I discover the Nutella Brownies recipe from BuzzFeed. Just 3 basic ingredients commonly found in kitchen, and with just 3 simple steps, mix-set-bake, you can bake like a pro. Another beauty of this recipe is, no heavy washing is required. 2 big thumbs-up!

Ingredients
400g of Nutella Hazelnut Chocolate Spread (a bottle)
2 eggs
1/2 cup of plain flour

Instructions
1. Mix all the 3 basic ingredients listed above until everything is nicely combined.
2. Coat a baking tray with baking spray. Pour the mixture in and smooth the surface with spatula.
3. Bake in the preheated oven at 175C for 20min.


Slice the brownies and serve. Yummy. No extra sugar is required for this recipe and the sweetness from Nutella itself is already sufficient to bring out the flavour to the brownies.

Tasty Pan Mee with Mou Klassiske Hønsekød Suppe

I always use the Knorr chicken cubes as the soup base for my noodles and pan mee soup. Recently Fei introduced me to the frozen soup, Mou klassiske hønsekød suppe (Danish classic chicken soup). This has indeed brought a 'breakthrough' in my pan mee recipe. The soup coupled with some secret twists led to super delicious pan mee.

For the interest of time, I will not repeat method for pan mee dough. You may refer to my older post on Homemade-Pan-Mee. In this post, I will share on the additional twists that help to enhance the taste of my 'upgraded' pan mee.

A pack of Mou classic chicken soup is sufficient for 2 bowls of pan mee. The soup is well seasoned and there is no additional seasoning required. The soup comes with vegetable chunks too including carrot, celery, radish etc. I like greens, so I added some spinach into my soup. Shiitake mushroom does wonder to the pan mee too. Instead of boiling them in the soup, I opted to sauteed the finely chopped mushrooms with a bit of cooking oil and salt in order to bring out the earthy flavors of shiitake mushrooms. The mushroom serves as a great condiment to the pan mee, an added crunch to the overall taste.

For the finishing touch, I topped the pan mee with other condiments such as shredded egg, homemade fried shallots, a dash of lemon juice and some chili slices. Voila, the perfect 'upgraded' version of homemade pan mee is done.

Taro Japanese Restaurant, London

The online reviews for Taro Japanese Restaurant, London are good. Since we were shopping around the Oxford Street, we decided to stop-by the restaurant for some Japanese treats.

It was about noon (before 12 noon to be precise), and there were already some patrons in the restaurant, mainly the locals I reckon. Customers started to swamp in when it got to 12.15pm and almost 70% of the seats where gone in a jiffy. The advantages of being the early birds are i)you get to choose the best seats and ii) you can take your time to browse through the menu. That were exactly what we did!!

Nothing beats a bowl of warm home specialty tonkotsu ramen on a chill day (yeah, it was a rainy afternoon). If possible, I wish the soup could be a bit more richer in taste, just like the one serves in Menya Musashi - milky pork soup. This is considered pretty good for European standard. I like the chewiness of the ramen.
You will never go wrong with curry katsu don (curry chicken fillet with rice). Yeah, it proved me right again. The chicken cutlet was cooked to perfection. The cutlet remained crunchy from the outside even soaked long in the curry gravy. Such a comforting food - a spoonful of rice with the curry potato/carrot and a thin slice of chicken cutlet. Delish.
I like the curry katsu don so much that I will surely come back for that during my next trip to London. Perhaps, I will forego the ramen and opt for the bento sets next time.
